Herb and Citrus Roasted Chicken

herb and citrus chicken I know I’m posting this on Meatless Monday, but save it for another day, a midweek meal or even a special occasion, it’s that good, it’s simple to make and the bright colored citrus makes it look elegant and pretty!

It’s filled with juicy fresh lemons and oranges, lots of garlic and herbs and when roasted together the flavors are divine!

herb and citrus chicken I found this recipe on Pinterest and was instantly drawn to it, you can use a whole cut up chicken, other chicken parts or you can adapt the recipe like I did using just the breasts, either way it’s bullet- proof!

Herb and Citrus Roasted Chicken
 
Ingredients
  • 2 bone in, skin on chicken breasts, or other chicken parts
  • 5 cloves garlic, minced
  • 2 tablespoons honey
  • 2 whole lemons, one juiced and one sliced
  • 2 whole oranges, one juiced and one sliced
  • 1 tablespoon Italian seasoning, dried
  • 1 teaspoon , garlic or onion powder
  • red pepper flakes, a good pinch
  • 1 medium red onion, sliced
  • ¼ cup of olive oil, plus extra for drizzling
  • fresh thyme and rosemary
  • salt and pepper to taste
Instructions
  1. Heat oven to 400 degrees
  2. Whisk together the olive oil, honey, lemon and orange juice,dried seasoning,paprika, red pepper flakes, onion or garlic powder, salt and pepper.
  3. Place chicken into a baking dish and pour mixture on top turning to coat all sides, at this point you can let it marinate for a little while if you have the time for even more flavor infusion.
  4. Arrange the sliced citrus and onion all around and underneath the chicken.
  5. Place fresh thyme and rosemary throughout and a good drizzle of olive oil.
  6. Roast uncovered for about an hour or until juices run clear and chicken is fully cooked.

  2. i added regular paprika although you didn’t list it in ingredients. i was afraid to use the smoked variety as i wasn’t sure if that is what you intended. thanks for a yum recipe.

    He made it with cornish hens that he flattened.

  4. I made this last night for dinner. It was amazing. You are right on about the flavor of roasted citrus…it made the dish. The hour cooking time was perfect for the breasts I used which probably weighed in at 10 ounces or so. This will become a frequent dinner at Mama D’s.

  5. We have roast chicken every Sunday night. I have just served your citrus chicken with roast potatoes and steamed veg for dinner. Hubby who loves to eat but doesn’t comment when I try something new told me this was very nice. As did both our girls. I used a dozen chicken drumsticks, we use the meat in lunches over the coming days. Thanks so much this is a winner.

  6. Made this last night. Just delicious. I happen to have had everything on hand, including the bone in breasts. I did them at 375 convection, but will do less time or lower the temp as there was a little more char than I like. Shoulda’ watched more carefully. Still is a recipe I will add and already shared with my dil. Love your site. Grew up in the Windy City.

  7. Sounds and looks delicious. One question: do you really roast at 400 degrees for an hour? That sounds like a long time for chicken breasts……but if you say yes, then that’s exactly what I will do! Thanks.

    • Well they were bone in chicken breasts,but to be sure check 15 mins or so before that, use you best judgment regarding size and thickness of chicken Bonnie.

  13. I got this post on Meaty Tuesday so that’s okay 🙂 I made something similar to this last week but it didn’t have oranges in it. Then several weeks ago I experimented with an orange and lemon and found something lacking. This is great – you’ve given me a springboard where I can experiment with one more ingredient.   15. I just made salmon with citus twice in the last week but will try this recipe next while citus is so good and plentiful. I like the addition of the honey and the garlic and it’s so colorful too.
