I served it with roasted veggies tossed in my favorite balsamic glaze, a delicious weekday meal it was! |
The husband loved it so much he wanted to eat the leftovers the very next day! Ingredients recipe adapted from Joelen I used ground turkey and it was a little over a pound but you can also replace with ground chicken 2 finely chopped garlic cloves 1/2 chopped onion 2 eggs panko crumbs, enough to just soak up the moisture 1/2 cup marinara sauce, homemade preferred, additional for top and to serve with. 3/4 cup of small cubed asiago cheese a handful of grated romano cheese fresh chopped basil and parsley s&p, of course Mix everything together and form into a loaf on a sprayed baking sheet. Bake at 375 for around 1 hour. Last 20 minutes spoon marinara over top and place fresh mozzarella slices over it. Garnish with fresh basil. |
I love this recipe! Can this be frozen? If so before or after baking? Thank you!
Katie, I would freeze it maybe after baking, although I’ve never done it, I have froze meatballs after cooking and they always turn out when defrosted and heated up.
I made this today and it was absolutely delicious and I will be making it again!! Thank you for the great recipe
So happy you liked it Stacie!
Ciao Nonna Marie !!
You are my new Nonna in America!!
I just tried your Chicken Parmesan Meatloaf
recipe with a little of my style of cooking, and it was awesome!!!
I love you blog xxxx onto the next recipe!
Ciao Roberto and welcome!
Thank you Marie for all the nice recipes. For some reason I couldn’t get the chicken soup recipe.
This was fabulous. Made it with turkey and we loved it!!!!
This looks wonderful. How many does it serve
I would say at least 4 Annmarie, maybe more if children
This was so amazing! I made last night and it really did taste like chicken parm. I used the lean ground turkey because I’m on a fit program, but wonderful. Thanks!!
I’m so glad I found this delicious recipe. It has become a favorite at home. I sent it to my sister in Barcelona, and she made it for the holidays in 2012. We both make it often. Thanks for posting it. It’s sooo good.
Glad you liked it Athe!
I have made this many times in the last month. It has been a BIG hit with my entire family. I have had everyone do a taste test and everyone wanted the recipe. The best meatloaf I have made to date and I have made many. I do not usually make the same thing twice, so when I tell you I made it several times, you can bet it is a great big compliment to the Proud Italian Cook who provided the recipe. YUM…..
Cora, How nice! So glad it was a hit!
Another great meatloaf recipe with an awesome garlic sauce is the 1770 House Meatloaf by Ina Garten. Awesome. You can Google it.
Oh my gosh Marie that looks mouth-watering! The idea of roasted veggies with balsamic for balance on the side sounds perfect.

I’m always looking for ways to jazz up turkey meat loaf. I must try this!
Wonderful comfort food! I also prefer using leaner ground turkey to make meat loaf, Marie. Adding asiago cheese to the mix sounds so delicious!
Marie, this looks so delicious, I am absolutely going to make this. Love the roasted veggies too, although I love mashed potatoes with meat loaf. xo
