Savory Zucchini Ricotta Cheesecake

It’s made with three different kinds of cheese which you can vary according to your liking, plus it’s baked without a crust which gives it such a light and creamy result.

Along with the cheese you’ll taste a hint of garlic as well as the fresh taste of lemon throughout the filling, all of which compliments the zucchini so very well.

Savory Zucchini Ricotta Cheesecake

  • 9 inch pan, either a tart pan, pie plate or even a springform pan, it doesn't matter as long as you brush it well with olive oil so nothing sticks
  • 3 zucchini, sliced lengthwise with a knife, not too thin or it will disapear in the ricotta, thick enough so it still can bend a bit, leaving the skin on so you can see the green sticking up from the ricotta, don't bury it.
  • 2 cups ricotta cheese
  • ½ cup, Pecorino Romano
  • ½ cup of grated mozzarella plus a little more for sprinkling on top
  • 1 garlic clove minced finely
  • zest of 1 lemon
  • 3 beaten eggs
  • 1 teaspoon each of chopped parsley and basil
  • olive oil for brushing and drizzling
Instructions
  1. Preheat oven to 400 degrees
  2. Oil your pan well on the bottom and sides so nothing will stick.
  3. In a bowl add all ingredients and mix well until all is combined.
  4. Place mixture into your prepared pan.
  5. Take your zucchini slices and arrange them into the ricotta, you might have some leftover slices depending on how big your zucchini is.
  6. Place pan onto a rimmed baking sheet for easy in and out of the oven.
  7. Bake for 30 minutes then take it out and sprinkle more shredded mozzarella on top, it will give it a nice golden brown color.
  8. Place bake into the oven and bake for 15 to 30 more minutes, ovens and moisture in the ricotta will vary, just continue baking until golden on top and the ricotta is set, check it with the tip of a knife in the center to see if it comes out clean.
  9. Let it cool down to room temperature before cutting into it.
  10. Drizzle a little olive oil on top before serving.

ROASTED TOMATO AND RICOTTA TART

This is such a great summer appetizer, side dish, or even a light lunch. Savory ricotta on flaky puff pastry that is studded with vine ripened tomato slices that have been roasted with a hint of garlic, thyme and olive oil. Now pour yourself a glass of your favorite crisp white wine, and your good to go!

Lay parchment paper on a baking sheet, add your sliced tomatoes, fresh thyme, ( you can use fresh basil also, but add it later you don’t want it to get brown) ) salt, pepper, crushed garlic, and drizzle them all with EV olive oil. Roast at 400 degrees till juices are more concentrated. These could be done ahead of time until ready to use.

Next mix up your ricotta with salt and pepper, egg and lots of grated cheese, I used Romano, because it has a more intense flavor. This also can be done ahead of time.

Place 1 sheet of puff pastry on a parchment lined baking sheet, and with a small knife form a 1″ border around the pastry and slice diagonally all around like it is shown above. Be care full not to cut through. With in the frame, poke with fork all over, and lightly brush border with olive oil.

Place ricotta mixture within the frame, now layer the roasted tomato slices all over.

Bake for around 20 minutes at 400 degreesF, till golden brown. Let it rest for a while before you cut into it. Serve warm.

SAVORY RICOTTA BUNDLES WRAPPED IN PANCETTA!!

First I have to say, this it not my recipe, I discovered this little gem while sipping on a latte at Borders bookstore and looking through the latest Donna Hay magazine. She had a whole section on ricotta, which really interested me. I never did purchase the magazine, but I definitely made a mental note of these. They are very easy to make, so refreshing and light!! I have been craving something citrus so I knew just the thing to pair it with! Now I don’t quite remember the name Ms. Hay gave these, ( you’ll have to check out the magazine). But to me they are little ricotta bundles,so savory and so good!!! If you’re looking for a light lunch or dinner ( and you love ricotta!) you got to try these. And whats really nice, you can make a whole bunch, keep them in the frig, all you have to do is warm them slightly in the microwave. When they’re warmed all the flavors come out.

Simply mix about 1lb or more of ricotta, with 1 cup of Parmesan, (I used Romano) 1 egg, I added some lemon peel, salt and pepper. That’s it!!

Next take a muffin tin, sprayed with oil and line it with 1 piece of Pancetta, scoop the ricotta mixture on top. Bake at 350 degreesF for about 30 min. or until set and golden.
I placed them into a salad mixed with Romaine and Arugula, whipped up a fresh lemon and olive oil dressing to pour on top, and then topped it off with some toasted pine nuts.
