An Ode To Summer Tomatoes

Summer is fleeting by and I couldn’t let it go without paying homage to all the beautiful tomatoes I’ve enjoyed all season long.  Summer tomatoes are the absolute best, there’s nothing like the taste of a fresh vine ripened tomato.

I can’t even begin to tell you how many sweet as sugar, clustered tomatoes on the vine that have graced my table, I can’t resist, they’re so gorgeous!summer tomatoes

Heirloom tomatoes are another big favorite of mine, the different varieties have a history that has been passed down through several generations. It’s been said that if you’ve never tasted an heirloom tomato, then you’ve never tasted a real tomato, I agree.

I love the odd and quirky shapes they have as well as their colors that range from near black to pink, golden yellow, green and ruby red, and the funny names like mortage lifter and green zebra, I could never get tired of them.tomato caprese

Insalata Caprese, I’ve made it so many times this summer, whenever I had a party, or went to a party or get together I usually brought a big platter full. It was always welcomed and gobbled up. Who doesn’t like juicy tomatoes, fresh mozzarella cheese, garden basil and good olive oil, it’s a win, win combination!tomato caprese

Caprese Salads really don’t need a recipe, they’re so simple to make and requires just a few quality ingredients, you must have beautiful ripe tomatoes, the best olive oil you can buy and fresh basil that you picked  preferably from your own pots.

The only thing is, you might want to change up the variety and color of tomatoes and the cheese you’ll be using, in my case it’s straight up fresh mozzarella or burrata.

Let’s talk burrata cheese for a minute, the outer shell is solid mozzarella but then when you break it open the inside is filled with soft stracciatella and cream, when paired with summer tomatoes it is a dream come true!tomato caprese

Sometimes I replace fresh basil with my homemade basil pesto which I also make each summer, dabbing it all around on top of the cheese and tomatoes for a flavor that will zap your senses.tomato caprese

When I want to indulge even more I’ll finish off my caprese salad with a swipe of rich balsamic glaze, you can just put me in a corner some where with a hunk of bread and I’ll be very happy.tomato caprese

I like changing up how I serve my summer tomatoes by either fanning them onto a platter or stacking the slices on top of each other as a little different presentation, as well cutting them into wedges and changing up the cheese  into little balls of mozzarella, better known as bocconcini.tomato capresetomato salad

No matter how it’s presented on a plate you can’t deny the caprese flavors that shine through and through, in my opinion it’s one of the best things about summer.summer roasted tomatoes

Cherry tomatoes are fabulous fresh but their flavors are even more intense when roasted. I normally douse them with olive oil and sprinkle shaved fresh garlic all around and adding fresh basil at the end.

The blistered tomatoes create the most fabulous juice that becomes the perfect sauce to toss into cooked pasta, I’ve done this many times for family parties.tomato capresetomato caprese pasta

You can go one step further with that pasta and finish it off by placing some creamy burrata on top, this is an absolute summer favorite in my house and such a great dish for entertaining.tomato pasta

I will miss the perfection of the summer tomato and look forward to next year when they appear again, so on to the next season of apples and pumpkins!

Summer Eats to Beat the Heat

easy summer eating This right here is heaven on a plate to me! Creamy, dreamy Burrata cheese, grilled artichokes, garden fresh tomatoes loaded with fresh basil, a little prosciutto and some grilled crusty bread. This is good eating!

When it’s hot outside this is what we like to eat. The artichokes are the only thing I cooked here, I make them all summer long, they’re so addicting. If you’re an artichoke fan like we are and you prefer a lighter summer version, then this one is for you.

They’re stuffed with romano cheese, parsley, garlic and lemon zest and then placed on the grill until the cheese melts and gets nice and crusty. My Grilled Artichokes is one of my most pinned recipes and it’s so simple to make! You can find it here.

home grown tomatoes Since we have a ton of tomatoes coming in daily from our garden almost every meal includes them, so that’s what this post is about, some of the ways I use them.

juicy garden tomatoeseasy summer eating This was our dinner the other night, roasted peppers, grilled zucchini, asiago cheese, prosciutto, salami, castelvetrano olives and some totally crunchy frezzelle which is the perfect base for our juicy garden tomatoes. I added some apple slices and a glass of wine and we were happy campers!

My husband would take this over a steak any day, we love to eat like this, especially in the hot summer months.

summer panzanella Here’s a salad that’s a meal in itself, garden tomatoes, fresh basil, olives, onions, grilled zucchini  and chunks of crispy bread doused with olive oil and grilled, sort of like a panzanella, although a true panzanella  requires you to wet the bread, I prefer mine crispier.

summer panzanella The dressing is made with a simple olive oil and red wine vinegar but the magic happens when everything gets tossed together and all the flavors meld into one. The tomatoes can either make or break this dish so be sure to take advantage of all that summer offers.

Sausage Making 101

Each month a member of our Italian/American club gets to host a cooking class of their choice, its called Cucina Italiano. I did one here. This past week I attended a sausage making demo at a members home. Homemade Italian sausage made “old school way” with a hand cranked meat grinder.

She was very prepared and had her pork shoulder all trimmed and ready to go, leaving it about 80% lean to about 20% fat. The meat was then cut into chunks and passed through the meat grinder. Seasonings such as salt, pepper, fennel and red pepper flakes were then added to the ground sausage. At this point I would cook up a tiny bit to see if your seasonings are to your liking, if not, you could always add more before you start stuffing.
Next the sausage stuffing attachment was put on and the casings were placed over the stuffing tube. It worked great with 2 people as one was cranking and feeding the sausage meat into the hopper, and the other was guiding it in the casings.

Grills and ovens were going as everything got cooked up and taste tested! Its nice to know what’s actually in your sausage. Quality meat with no fillers! Years ago I use to make my own sausage, it inspired me to try it again. I’d like to try making some of those gourmet sausages that cost a fortune, maybe a chicken sausage with sun dried tomatoes and artichokes. Yumm!

The possibilities are endless!

FINAL GARDEN UPDATE

Well I have to give a big shout out to the hubby he has proved he has a green thumb!

Our tomatoes are coming in like gang busters. Vine ripened juicy tomatoes of several different varieties, a joy to eat with our dinners. Eggplants are almost ready to be picked and the zucchini has all been perfect, we make sure to pick them before they get to big.

I’m sure gonna miss this when the cold weather comes around!

These are little Japanese beetles going to town on our grape leaves. We have a small vine on our fence and they’ve been destoying all our leaves. They feast on the tissue between the veins and leave it looking all skeletal, nasty little creatures!
