Grilled Seafood Salad

summer seafood salad This grilled seafood salad is one of my all time favorites for light casual summer eating, it’s a combination of shrimp, scallops and calamari which lay on top of mixed greens and crunchy vegetables, it’s all tossed in a lemon vinaigrette that’s spiked with a little limoncello, which gives the dressing that extra zing!

All the seafood can be grilled ahead of time and then the salad can be composed at the last minute so it’s perfect for entertaining. Add some crusty bread and a bottle of wine and I promise you’ll be in for a scrumptious treat!

I used this beautiful new grill pan I got, but any grill pan will do.

stove topped grilled seafood Quite honestly I don’t like grilling delicate seafood directly on top of the grates on my out door grill unless it’s on a plank or something to hold them secure, because with out fail something always falls between the grates and I have to try and pick it out before it burns, so I’ve always used an indoor grill pan for this grilled seafood salad.

I already own a heavy cast iron grill pan with a popular name that I thought I would use much more than I do, but it’s a pain to clean. I end up boiling water in it to loosen up the food that gets stuck between the grates then I have to take my time using a plastic scraper to try and remove it all, like I said it’s a pain!

Ingredients
  • Amounts will very according to your seafood preference, this is just an estimate on what I used for 4 servings.
  • SEAFOOD
  • 8 large shrimp, tails off
  • 8 oz. sea scallops
  • 1 lb. of calamari ( I leave the bodies whole and cut into rings later, it's easier
  • SEAFOOD MARINADE
  • 4 cloves of chopped garlic
  • the zest of 1 big lemon
  • a handful of chopped parsley
  • salt and pepper
  • drizzled olive oil to coat seafood
  • 2 lemons, cut into slices for grilling
  • SALAD
  • 2 fennel bulbs, sliced thin
  • 1 bunch of celery hearts with the leaves, chopped
  • 5 radishes, sliced thin
  • a handful of capers
  • assorted olives, sliced
  • cherry tomatoes, sliced
  • For the greens I used a mix of water cress and arugula,(mostly arugula)
  • LEMON AND OLIVE OIL DRESSING
  • 1 part lemon juice ( with a splash of limoncello, optional) to 3 parts extra virgin olive oil
Instructions
  1. Make sure all seafood has been padded dry before you marinade them, you should have no added moisture.
  2. Place all seafood in a glass bowl with all the marinade ingredients, toss and let it sit for 40 minutes.
  3. Grill all your seafood, which can be grilled up to a day ahead, let it cool down then refrigerate them separately, if you're doing them ahead, not all mixed together. Either way seafood should not be warm or hot for this salad, room temp or cold.
  4. Whisk up your dressing and set aside.
  5. When you're ready to compose your salad slice the scallops into quarters or in half according to their size.
  6. Cut calamari bodies into rings.
  7. Leave shrimp whole and the calamari legs.
  8. In a separate large bowl toss all salad ingredients together except for the seafood, you can add more or less or any other ingredient you would like to add, there is no exact rule with a salad.
  9. Add and toss your dressing, less is more, don't drench it, taste as you go.
  10. Grab a huge platter, place salad on top, arrange all the seafood on top of the greens, add in some grilled lemons slices.
  11. Don't forget toasted or grilled crunchy bread, it's a must!

  26. Hello. That pan looks fabulous. I’d love to cook steak in it, as I love to char the front & back of the steak and then have it pink on the inside. I bet this pan would work perfectly for that.

  27. Lately, my favorite thing to grill has been turkey burgers. Both of my boys just gobble them up. I add a bit of Parmesan cheese, diced pepperoni and Italian herbs. After they are cooked I top them with marinara, fresh mozzarella, banana peppers, arugula and a garlic aioli.

    I love to split a whole chicken and marinade it in a vinegrette of lemon juice, salt n pepper, fresh rosemary and drinking mustard. Place it on the grill skin side down place a weight on top for a half hour then remove the weight, flip it and cook till done!! Delicious

    Hi Marie, My husband and I love to grill boneless chicken breast on the grill. I marinate them in what ever comes to mind at the time for a couple of hours. The real secret is to wrap some bricks in foil and place on top of the chicken, cook a few minutes one side. Turn them over ,replace bricks on top and cook just a few minutes more.   116. Frankly we love to grill slabs of polenta and of course we love doing zucchini. Just like you, we have another grill pan, cast iron, that no matter how much it is seasoned you have to watch it like a hawk so the food doesn’t stick. There are still bits and pieces that stick and sometimes I think you need dynamite to loosen the food bits. Now I would love to replace my grill pan with this one. I have chicken I’d love to make on it and our tuna and other seafood. Your recipe looks delicious.     My favorite thing to grill is a big rib eye. Olive oil, salt, pepper, and then just toss it on the grill. I prefer larger cuts that feed multiple people because I feel larger cuts can stand up to more heat and get a better sear than smaller more delicate cuts. It also looks so impressive to bring a big “brontosaurus” size steak to the table.

    there are so many thing that I love to grill that it is hard to pick a favorite. I have to say that Shrimp ranks right up there. I usually do them in a grill basket, but on occasion I skewer them. While it take a bit of vigilance to prevent overcooking, the flavor that results is amazing.

    My favorite thing to grill is chicken. I really like to grill them indoors, with butter and salt. That’s really all you need, butter and salt on chicken and let is brown. It is just magic.     My favorite thing to grill is tofu! I drain it, then marinate it with a teriyaki like sauce. I usually grill chicken as well in a similar sauce and lots of summer vegetables like zucchini, yellow squash, tomatoes, and onions. Your recipe above looks great for party!

    Hello Marie!! My favorites foods to grill is a combination of garlic, zucchini, broccoli, onions, carrots, peppers, eggplant & tomatoes till they are soft & carmelized then I puree them into my fresh marinara sauce & serve over pasta. Not only is it healthy but I can get my kids to eat every veggie possible.

  161. Hi, Marie! My fave thing to grill is beets. I like to use whole small beets and I toss them in olive oil, spices and either some balsamic vinegar or soy sauce, then pop on the grill.     The older I get the less I like grilling meats on the grill. I don’t know if it’s me but I feel as though I get much better results as far as tenderness and moistness when I bake meats instead. Tha being said I now also prefer grilling almost all vegetables instead of inside cooking. My favorite must be a simple olive oil and salted marinated asparagus on the grill. Pineapple is on my list to try this summer.

  170. My favorite thing to grill? That is one tough question because I LOVE to grill everything! My favorite thing to grill could be baby back ribs because in the summer I grill a lot of them! And like you, I do cook fish on the grill but almost always on a cedar plank.

  175. This looks delicious–as do all of your recipes, Marie! My favorite dish that includes grilling is a shrimp and vegetable orzo salad with pesto. We grill the shrimp, along with red, yellow and orange bell pepper chunks. Just before serving, we combine all of the grilled items with the cooked orzo, pesto and Parmesan cheese. It’s a great do-ahead dish for entertaining. The grill pan would be perfect for year-round grilling and searing.

    Hi Marie, I recently switched from a gas stove to induction. I miss grilling pretty much any food now, as my cast iron, believe it or not, is not great on induction. I also worry I’ll crack the glass. Unfortunately cast iron is not completely flat on the bottom, so not so great on induction. I use to love grilling steaks and veggies. I live in Chicago, so indoor grilling is a perk with our long cold months. BTW, I love your blog, I also follow you on instagram! Best, Francesca

  222. I’m a huge fan of grilled vegetables! Sliced butternut squash, tomatoes cut in half and drizzled with a little oil and sprinkled with salt and basil, eggplant grilled whole and then the yummy center scooped out and mixed with chopped up onion and tomato, red or yellow pepper boats filled with an egg or two and topped with a bit of sharp shredded cheese, corn in the husk that’s been soaked in water for at least 12 hours… I like meat, too, but LOVE the grilled vegetables 🙂 The pan would be great for doing chunked up vegetables, cutting the grilling time down so you can enjoy the deliciousness even sooner!

    We’re also huge fans of salad and this one sounds amazing. Definitely going to try it! And we just so happen to have some limoncello I made a few months ago, so will definitely be adding a splash!

    I love to make a foil pouch with bacon on the bottom, sliced potatoes and onions on top, with a sprinkling of chopped garlic, plenty of salt and freshly ground black pepper. Seal it and let it cook on the grill turning the pouch carefully for about 15 minutes. Then pierce the top with fork/knife to allow steam to escape. Continue cooking for another 5 minutes. You will have deliciously bacon flavored potatoes, perfect with grilled steak or pork chop.
