It’s My Blogiversary Today

It’s hard to believe that 6 years ago today I started this food blog called Proud Italian Cook and what a journey it has been from day one! It still continues to be one of the joys of my life. I’m honored to be a part of  a wonderful community of bloggers, many of whom I can truly call my friends. To all my readers, I can’t tell you how much I appreciate your support with all your comments and personal emails that you’ve taken the time to write. Thank you to all those who “liked” me on Facebook, and a thank you to all my loyal subscribers and those of you who have “pinned” any of my recipes on Pinterest. And last but not least my close family and friends!
 This past year has been full of change for Proud Italian Cook, I really moved out of my comfort zone complete with a makeover! I took the leap and left a free blogging platform and moved forward on to one that I own, and I’m so happy I did! With it came many modern updates that I so wanted to give all my readers. The other thing I did, (and I still can’t believe it myself), I wrote my first e-book on Italian Sauces. Inside you will see what I cook for my own family, special recipes and stories that bring me back to my own traditions from childhood. For all of you who bought my book, thank you, I appreciate it. For those of you who might be considering it, it’s always available for purchase right here on my blog.

What will the future bring? Well one thing for sure I’m not going anywhere yet, this is too much fun, and who knows, there might just be another e-book in the works!

Although I was hooked early on with your recipes ..It all came together for me when you posted the Cuciadati recipe. This has become our classic Christmas cookie.   31. You are an inspiration and comfort to me. My hubby was diagnosed with RA and it was recommended that he eat a lot less meat to alleviate the swelling. Your tasty recipes have convinced him that he can enjoy vegetarian meals. His favorite is the polenta with grilled vegetables and eggs. Anything you suggest with portabellas has satisfied his cravings for meat. Thank you!

I serve it with extra large Gulf shrimp sautéed in fresh garlic and butter in addition to all the fresh vegetables I can possibly roast.     Congratulations on your Blogiversary! I’m a veggie fanatic so I’m always especially interested in your veggie recipes, like the wonderful summer side salads. It’s great to have such wonderful seasonal recipes. I’m always looking for the email to arrive so I can see what new Italian dish you’ll be offering. Anything salad, marinara…they’re my very favorites but I’m open to any new recipe you blog. The Caprese-style Portobellos were delicious and easy to make.     Congratulations on your blogiversary! I love your recipes, but may favorite from this summer (so far) is the zucchini ribbon salad. It inspired me to make a patty pan pasta dish: very thinly sliced tossed into warm bucatini with toasted pistachios, shaved baby red onions, grated romano, olive oil and lemon juice.   82. I tried the Veggie Bundles Wrapped in Phyllo (May 15, 2013) and loved them. I like trying recipes with Phyllo, because I love the light flakiness of the pastry. This recipe was delicious. I would also like to add that any of the salad recipes I have tried have been great eats and wonderful for beating the unbearable 100º+ summer heat we have been having in Texas. Thank you.

As a first generation Italian, it’s SO nice to see some one keeping tradition alive as I lost my mom tenyears ago to cancer.     I like the fresh ingredients you use on your recipes, I lobe eggplant and love to cook thin sliced breaded eggplant. Your recipe with the healthy style of cooking the breaded eggplant with only lightly spraying the skillet and then baking them in the oven for 20 minutes then assembling them as stacked caprese style layered eggplant dish is healthy and still tastes great. The other dish I made was the zucchini lasagna with the roasted garlic béchamel sauce with marinara was fantastic. Made it twice. I cook Italian cookies and panettone bread at Christmas time, the biscotti are my favorite especially with fruit, nuts and different flavorings. I like uniscotti which are once baked and softer. Congrats on your flavorful, creative and very visual articles on eating, cooking, and visiting food suppliers. Homemade pasta also with sauces! Viva Italy and Sicily, The best part is that you are sharing your passion and all of us are learning and enjoying the results, along with our families and friends.   191. The portabella style caprese are amazing. So simple to make as an appetizer, side dish or entrée. Just depends on the size. A nice substitute for our usual tomato and cheese caprese. Love the smell as it cooks. No one can resist trying them. A lttle balsamic takes it over the top. Love simple and fresh recipes like this. Keep them coming.
