Caprese Ravioli with Roasted Tomato Pesto Sauce

Here’s a little appetizer I put together in minutes. I fortunately have access to good quality fresh pasta sheets so it made the process go really fast!
I pre-roasted grape tomatoes ahead of time, bought some fresh mozzarella balls and basil for my ingredients.
Now believe me, I like to make fresh pasta, but I can’t just make a little bit, it ends up being an all day project with tons of pasta and flour all over my kitchen, and besides I like to do it in the winter.
 So I’m grateful to purchase these neat little sheets all perfectly cut and ready to go!
I used a 3 inch cutter and was able to make about ten ravioli, enough for four people, about two each.
The perfect starter while your grilling up something!
Look how simple this is! Wet your cut pasta around the edges then place a basil leaf, a roasted tomato, (make sure it’s not too juicy) and top it off with a mozzarella ball.
Crimp them together with a fork close to the mozzarella ball so it doesn’t move around.
Boil until tender and then drain on a kitchen cloth, you don’t want them to be wet!
For a very quick sauce you can take some good store bought pesto like I did, add in a few of those extra roasted tomatoes you have, and a little lemon zest for freshness, mix together and spoon it all over!
 And if that’s not enough, drizzle your plates beforehand with the best balsamic glaze you can find, here’s mine.  Oh My!

    Thats what I figured.. Thank you. Going to try it as soon as I can locate some pasta sheets. I live in Arkansas and I have searched, but will keep searching till I find them:) and when I do plan to buy enough to freeze. If you know anyone or any place that has them please do let me know or a place that will ship them to me… Help! I love Italian… Hubby loves Mexican not me:) I love to cook, it’s a form of Relaxing for this old chic… Learned to cook while in Foster Care at the age of 8….

    • Hippie Chic, I roasted them on a foil lined baking sheet drizzled in a generous amount of olive oil, salt and pepper at 400F until they burst and juices start to run.

  7. Marie-did you use store bought basil pesto and some of the roasted tomatoes? That is how I read it, then I wondered if it were roasted tomato pesto + tomatoes. Wondering…Can’t wait to try. Planning dinner party soon!

    • Ellen, I roasted my own grape tomatoes, I did not use basil pesto I just used a fresh basil leaf and the mozzarella ball. In the picture I showed how I layered it all. On the other hand a good store bought pesto might be good! Let me know how it turns out!

      • I think what she and I are asking is the same. You have “with roasted tomato pesto” in the title but you didn’t specify what kind of store-bought pesto you topped the ravioli with in the post. Standard basil pesto and then you added roasted tomatoes? Or is it a roasted tomato pesto where you added more tomatoes?

  8. I made this tonight and it was fantastic! My husband loved it! The balsamic glaze gives it just the right finish! I was out of fresh basil, but had some freeze-dried basil that I keep in the fridge which worked just fine. I also added prosciutto, which made it quite delicious. I also made my own pasta, which gave me a lot leftover that I could freeze for next time. Thank you for the wonderful recipe!

I couldn’t find grape tomatoes anywhere (they don’t seem to exist in Germany or they just call them the same thing as cherry tomatoes) so I went to the Italian shop and bought canned pomodorini. I drained them but I guess that wasn’t enough because I had to drain my ravioli after boiling. Next time I’ll roast them like you mentioned. We LOVE this dish. I made it with whole spelt pasta and some pesto, mixed with the tomatoes and cheese and it was delicious. Thanks so much for the recipe! We really, really enjoyed it. 🙂

  35. momof5, Standard market, I don’t see why you can’t freeze them, fresh pasta freezes good, when I make fresh I freeze mine, and all is good.
