Soup, Sandwiches and Dessert

I haven’t been cooking much lately, it’s been a whirl wind couple of weeks here as I lost a much loved cousin of mine to cancer, but recently I had to pull together a quick lunch for visiting family, fortunately I had all the ingredients to make this Sausage and Chard Soup. A big pot of comforting soup simmering on the stove always hits the spot.

Brown 1/2 lb. of crumbled Italian sausage, ( I used spicy)** Toss in 2 chopped carrots, 1 chopped onion and 1 large minced garlic clove** Add 1 1/2 cans of drained cannelini beans ( reserve half can) and a few cups of chopped swiss chard or kale** Pour in 1 1/2 boxes of chicken stock ( reserve the other half box)** If you have a cheese rind or two, put that in** Season with salt, pepper and a sprig of rosemary** Take the remaining 1/2 can of beans and the rest of the broth and place both in a bowl and if you have an immersion blender or just a regular blender give it a whirl and pour into the pot, this will act like a thickening agent. Cook until veggies are tender, it doesn’t take long.

In the meantime I sent the husband out to a nearby deli to pick up some Italian Subs consisting of provolone, salami, capicola, mortadella, tomato, onion and oil all on fresh Italian bread.

Worried that it wasn’t enough I quickly made some, Peppers and Eggs. Five or six large peppers seeded and cut into strips then sauteed in olive oil until soft, add in a dozen beaten eggs and lots of grated romano cheese, salt and pepper.
This is a big family favorite, such a humble sandwich that tastes like a million bucks! We’ve been eating this since we were kids, I always top mine with hot giardinera!
No time to bake? No problem! Just make a quick stop at our favorite Italian Bakery, you can never go wrong with Napoleans, Sfogliatelle, and fresh filled Cannoli’s!

But my personal favorite are their cannoli’s, crunchy and creamy with every bite! Now all you need to do is put on a big pot of coffee, a match made in heaven!

    I’ve often seen pepper and egg sandwiches on menus but I’ve never known quite what it was. So glad to see it on here along with a picture. It sounds amazing and it’s all I can think of now! 🙂 My weekend soup plans have also just changed, looks like I’m making sausage and chard soup instead of escarole, cannelini and turkey meatball soup. Chard is coming in my weekly CSA share too so it must be meant to be.

  8. I love making sausage and greens soups. It’s one way to mitigate the sometimes too-strong flavors of greens and gives you a good base to play with too. It can be a very typical lunch for as I try to always have some homemade stock in the freezer.

    Trying to do a sugar fast right now, so your baked goods photo are just too tempting. I have a pretty good bakery down the street, but I tend to stay out of there because it’s hard to go in wtihout coming out with more than I need!

  10. I am sorry for the loss of your cousin. Your blog is the first “foodie” blog I began following as I too am a “proud Italian cook”. As time has past, I realize we love several of the same places. I too go to the Italian Bakery in Addison (have been for years!) They have made all of my kids Christening, Communion, and special event cakes over the years. Freddy’s in Cicero is another favorite. Not sure if it is too far for you, but I have found that Frankie’s Deli in Lombard has delicious Italian sausage. Thank you for your blog as I enjoy you and your recipes so much!

You are so lucky to have so many wonderful deli’s in your area where pastries and cold cuts are readily available. I’m going to add your bakery to my list of places we must visit on my next trip to visit my daughter.

  13. Everything looks so good. There is NOTHING like a good Italian bakery. I can’t find any here in Virginia so I miss the ones I am used to from when I lived on Long Island. I love cannoli’s too and of course rainbow cookies!

  15. I learned about peppers and eggs from my husband’s family. Now a favorite in our house too. You’re right comfort food. Soups, sandwiches everyone has a favorite. I hope you and your family are getting back to normal.

    I’m a sucker for cannoli — made them once or twice, when I was young and nervy. Now, I’m afraid I’d nuts them up. No great bakery nearby!

  28. Checking to see how close that bakery is to my family in Chicago. I love a good cannoli. If you ever get to San Diego, you must go to Arrivederci in the Hillcrest area. They make homemade Napoleons that are too die for. Never had better.

  32. This is soul food for me, Marie. Peppers and eggs are one of my most favorite dishes from childhood, actually a sandwich of peppers and eggs was the last real meal my mom ate….oh well….congrats on the win and I am so sorry to hear about your cousin. xo

    Soup and sandwich is a wonderful combination and one of our favorite meals. I love to make soup of all kinds and often just use whatever is on hand and I’m always happy with the results. I also love peppers and eggs –a true “comfort food” sandwich anytime!

    You are killing me with the cannoli and pastries photos–I just came home form a two week work/vacation trip to California and we ate our way through so much good food that it is DIET time again..lol!
