The Thrill of the Grill!

I made this fish yesterday, it was 98 degrees out and my oven wasn’t going on. It’s so quick to put together, it cooks up fast and the taste? Well, you’ll just have to try it, all I can say is that you won’t be disappointed!

I take a shallow baking sheet and wrap the top and bottom with tin foil. Drizzle olive oil on the bottom, and add thinly sliced garlic on the top. Place your fish fillets over the sliced garlic, I used tilapia.
Season your fish with salt, pepper, and a sprinkling of paprika for color. Toss in some fresh herbs, I used parsley and basil. Add sliced cherry tomatoes, and kalamata olives and a small handful of capers. Scatter a few lemon slices around and add some of the juice. Finish off by drizzling olive oil all over.
Place the pan on a hot grill and close the lid. The smell is intoxicating as the garlic starts cooking and infuses the fish. When your fish is firm to the touch, it’s done! This is great for a crowd, you can even use shrimp and a 1/2 sheet pan for more space. For my 4 fillets I just used a 1/4 sheet pan.
The flavors all blend together leaving an exceptional taste!
Straight from the farmers market, fresh asparagus and sweet knobby onions. ( that’s what I call them.) You got to have some veggies on the side!
When I see pretty artichokes I can’t resist them, I love them grilled and I often make them throughout the summer, a great way to start out your meal!

Basically I trim and quarter my artichokes and slowly boil them until tender. I let them cool completely down, then I pull out the choke and prickly leaves. Place the quartered artichokes in a bowl, drizzle olive oil all over, place grated romano cheese between the leaves along with salt, pepper, finely chopped garlic and fresh parsley. Place them on a hot grill turning them over until the cheese gets crusty and garlic cooks, it just takes a few minutes.

This fish and artichoke recipes look fantastic – we are artichoke fanatics and usually have some cooking every day – my husband and sons and grandchildren all love to eat them so this recipe will be a great new way to eat them (usually we boil them and the eat with mayonnaise or some kind of aoli) this looks like a special recipe and can’ wait to try it – we are fish eaters so the fish dish will be a great main dish. Marie I must tell you have given us a new view of Italian food and we love it! Before I go shopping I check your recipes and have so much fund picking out what we will be having for lunch or dinner that day – we are on an adventure and we owe it all to you. Will be trying these two recipes tomorrow and also your recipe for the chopped veggie salad – thanks Marie for all these great recipes – last recipe we tried was the chicken cacciatore we ate it all and licked the pan it was fantasticly yummy

    Oh my goodness, those look divine! I am going to try these as soon as possible, but I have just one question. In the photo the artichokes look halved rather than quartered as your recipe states. Am I correct that they are halved or am I seeing wrong? I want to make sure I make these as close to your recipe as possible.

  29. The fish looks incredibly good and at 98*, you could almost cook it by sitting on your grill lid. We’ve been in the 90* for over a couple of weeks and the grill is getting lots of work.

  31. This is a great way to keep the heat outside the house. I even put my rice cooker out on the deck on hot days like this, and plug it into an outdoor outlet. Everything looks scrumptious, but my heart belongs to the artichokes!

  32. 96F here, so will be making this tonight on my grill! Last nt I turned the oven on to roast…..why not use my grill? I made eggplant parm all on the grill, and it was great! No heating up the kitchen! Love this recipe.
