Zucchini Coins with Fettucine

Good food doesn’t have to be expensive. In fact some of our favorite meals are very simple and not complicated at all. For a few dollars and less than 30 minutes you could have this on your table, and probably some leftovers for lunch the next day.

We enjoy meatless meals often. Sometimes I walk up to the meat counter and do a blank stare.

Been there, done that, did it! Don’t get me wrong, we’re meat eaters, but I have to say my favorite sections at the markets are the produce sections, I just love the variety, in fact that’s where I spend most of my money!

For this dish, cut your zucchini into coins and saute in olive oil till golden brown. Remove and drain on paper towels. In the meantime have your water boiling for your 1lb of pasta. In the same pan you sauteed your zucchini, add 2 shaved garlic cloves and about 1/4 cup of olive oil cook till light golden, also add some pine nuts till toasty. Add your cooked pasta and about 3/4 cup of reserved pasta water.

Turn off your heat, add back your zucchini, a good amount of grated romano, and chopped fresh parsley. Toss gently.
Believe it or not I’ve never had a veggie garden, I usually only want to grow tons of herbs, especially my beloved basil!
This year hubby’s going to try organic veggies (he’s the gardener) he just broke ground on Saturday. I’ll show you how things go as we progress.

  2. Ahh good luck on your garden. That tilled soil looks so inviting. A blank slate. Just wait till you walk out your bake door on a warm summers eve barefoot and pursue around your vegetable garden to come up with fresh pickin’s for a salad or even a main dish idea.

    I can’t wait to see what new and freshly inspired cooking ideas you will come up with this summer.

    It sounds like your husband will be doing all the work and you will be reaping the rewards.

    this is my kind of pasta. a good vegetable, pinenuts and shaved parm – wonderful olive oil – and i am done. although a littl pancetta goes a long way too. but that’s in a class of its own, right? hardly just meat…

    I’m so excited for your garden! I just dug up a small spot for mine the other day and am going organic too. My grandfather just gave me a ton of san marzano tomato plants so they are going in next weekend! Good luck with yours, can’t wait to see it grow!

    And send really positive thoughts for your new veggie garden. My Dear Dad did something similar in our Spring last year. His raised garden produced beutiful veg for Mum and Dad right over Spring and Summer and beyond. Now it is well and truely Autumn here Dad is replanting for Winter and beyond.

    I got to enjoy cooking and eating the Summer produce when up with them for Christmas. I’ll next be up there for their 50th wedding anniversary in June and hope to be cooking more of Dad’s veg.

This one looks particularly good to me because I love zucchini, especially when pasta is involved! Best of luck to you and your husband with your vegetable garden.   39. This is one of my favorite dishes. I love pasta with one or two ingredients. I also adore zucchini coins sauteed in olive oil. I could probably live on them.

    Like you – I’m an herb, not a vegetable, gardener. We have massive issues with deer and I’m just not up to putting up an electric fence or what not, so I do container gardening on our balcony and find that herbs do better. I’d love to hear how your husband’s gardening goes.

  40. Looks delicious! We have that (minus the pine nuts) a lot during the summer when my zukes are overflowing. I have never been without a garden. You will love it. I have one 8 foot long raised bed just for herbs! I grow tons of basil for my pesto! I encourage everyone to grow something good to eat! Yeah for you!

  45. Yum! We just planted out garden yesterday and have two zucchini plants. Last year we had so many zucchini that we were giving them away. This recipe will have a safe place in my kitchen until our harvest. I also have tons of herbs – makes cooking so much more fun.
