Balsamic and Herb Grilled Chicken Breasts with Roasted Red Pepper and Basil Salsa!!

Even though Labor Day is long gone, there’s still plenty of time left for grilling!
The flavors in this dish go so well together, I hope you’ll give it a try before grilling season is over.
Marinating the chicken is the key here, so you’ll want to do it for at least 2 hours.

In a Ziploc bag place 4 chicken breasts, 2 crushed garlic cloves, herbs of your choice, I used rosemary, oregano, and thyme, you can use fresh or dry. 1 tbl. of Dijon mustard, 3 tbl. of olive oil, 1/4 cup of balsamic vinegar, plus some salt and fresh ground pepper.

When done marinating, place on your grill to cook.

While your chicken is marinating grill your red peppers. Peel, seed, then cut them into a dice.
Place in a bowl along with some crushed garlic, lots of fresh basil, red wine vinegar, olive oil, salt and black pepper. Let everything sit together at room temperature.

When your chicken breasts are done grilling, you’ll want to spoon this roasted red pepper salsa on top. You won’t believe how good these flavors taste together! So please, fire up your grill and give this a try!

I love balsamic vinegar as a marinade for chicken, Marie, and there is noting as good as grilled and charred red peppers mixed with some chopped garlic and olive oil, so I know everyone who hasn’t tried this before will love this dish! I’m glad we will have at least another month of good grilling weather….got to enjoy it while we can!

  15. Wow! You don’t have to tell me twice. I’m making this recipe! We pretty much grill year around here in Oklahoma. Except for the extreme hot and cold months, but I’ve been known to fire up the grill on New Years Day. Thanks for giving me a new twist on Chicken. Love the roasted red pepper salsa idea! I have a feeling this might be another staple in my kitchen.

  23. Wow, this looks fantastic! Lucky us, we get to grill all year round in Florida…I actually almost prefer grilling in the winter b/c it’s not as hot out!

This balsamic and herb grilled chicken with roasted red pepper and basil salsa looks terrific! So do those potatoes! I think I would have a hard time not eating that salsa by the spoonful!

    Your cannoli filled cream puffs are outta sight! Your presentation with the choc and pistachios is absolutely beautiful! I love how you added rum and orange rind, too. I’ve only used a pastry bags a couple of times myself, so I’m no help there!

    My sister used to live in Highland Park for years(she now lives in Vernon Hills), and she’s told me about Ravinia! Your picnic looks like something from the finest of caterers! I don’t think I would have strayed too far from that spread throughout the night!
