GRILLED CHICKEN OREGANATO

This past weekend the weather was beautiful, which prompted me to fire up my grill for dinner.
Since I was going to be grilling chicken I knew exactly how I was going to make it. I got my inspiration for this from eyeing Amy’s huge jar of Marinata Diavola, over at Familia Bencomo.
What a great idea to have this on hand in your frig during grilling season. Go over and check out her recipe here, I had to change mine up a bit because I didn’t have any fresh rosemary, so instead I used dried greek oregano, hence the title…Chicken Oreganato.

What ever herbs you use trust me it will be delicious! Its simply a mixture of fresh lemon juice, extra virgin olive oil, crushed garlic cloves, sea salt, and pepper, and cayenne pepper. ( I only had red pepper flakes). Put it all in a jar, shake it up and use it as a marinade or just brush it on grilled meats, all kinds of fish, and your favorite veggies.

I didn’t make enough, so I’ll be making lots more. I love having it readily available in my frig, and the longer it sits, the better it tastes. 🙂

I even brushed it over my lemons that I grilled. If you have never grilled a lemon, you have to try it, it’s sweeter and super juicy! I squeezed it all over my chicken, mmmm was it good!!

  5. Hi Marie – I was in Chicago this past week for Passover, and the weather was gorgeous. We grilled chicken too! Sounds like Amy’s marinade is a keeper!
    Now that I’m back in SoCal, I’ll have to make some to store in the fridge as you suggest…YAY Grilling Time is Here!

  6. I have yet to purchase a grill, but at least I can look at yummy pictures like this and pretend I can smell the grilled chicken…and lemon – that’s something I’ve definitely got to try. You always have such interesting recipes, it’s refreshing coming across new and creative recipes :).

  14. Marie – everyone else has already commented on this but, damn girl! You know how to do a mean grilled chicken. It is perfect grilled on the outside, I can only hope it’s juicy and moist inside! It looks it in the pics. I’m impressed… it’s hard to grill chicken perfectly – it’s a skill.

    such a great, perfect summer meal. i often make a roasted version of this in the winter just to put me in the spring/summer mood. thank god the weather is FINALLY turning, huh? I can’t wait to see all the great summer recipes coming up.

    It seems anything grilled tastes better, doesn’t it? I have to try Amy’s lemon marinade, thanks! I usually use a balsamic vinegar and herb mixture.

    Yes, the opera was a “Moon Struck” moment, although Lincoln Center’s fountain was obstructed by a construction fence as they are doing work on the plaza 🙁

  41. Looks heavenly. I need a new grill. Mine is a coal grill but I want to switch over to gas( for more control). This is agreat marinade to have on hand.
