CECI STUFATI ( stewed chickpeas)

Beans and greens,what a perfect marriage!! And if you like chickpeas and a little heat, I’m certain you will like this. I actually used dried beans this time and I have to say I liked it better. It’s easy if you prepare them in advance. The other night before I went to bed, I put them in a pot with enough water to cover by 2 inches, and let them soak overnight. When morning came I drained them, and when I was ready to cook them, I covered them with enough water to cover 1 inch. Let water come to a boil, then cover and simmer for about 1 1/2 hrs.

In another pot, saute some garlic and onions in olive oil, along with red chile flakes. Cook for about 5 mins. then add drained beans and about a cup of water, salt and pepper. Cook about another half hour till all the flavors blend, then add some roughly chopped Swiss chard. Cook till wilted. Taste for more salt or pepper, and give it an extra drizzle of olive oil.

This is simple food, with great flavor!!!

    I must ask for your help. From the age of 8 to 12 I had the wonderful opportunity to leave in the countryside outside Naples. My neighbors, who rented a vineyard, grew tomatoes, too. Every fall, we had a weekend set aside to bottle(can) the tomato crop. These were the best tasting bottled tomatoes I have ever had in pasta and pizza, I have spent a lifetime searching for a replacement, but have not been so lucky. Unfortunately, I have forgotten the recipe. Would you know anyone from the old country who lived this tomato bottling experience and would be willing to share the recipe? I remember very little being so young, now 50. Thank you.

  12. This sounds nice and simple and tasty. I normally use canned beans and I have been wanting to try using dried to compare them.

  15. I’ve been doing a lot of bean dishes lately. This is great. Yesterday I purchased a jar of Luponi(?) beans and thought of you when I added them to my tuna on a bed of greens with some capers, lemon, herbs, etc.

  18. When I was young chickpeas, mushrooms and blue cheese were not on my plate if I could help it. Now that I am older I can’t get enough of any of these things. The fagioli dish sounds amazing with nice fresh ingredients and pure flavours 😀
